My Chocolate Flourless Torte

Flourless Chocolate Torte

Chocolate- dark chopped 2lb
Sugar 1lb
Brandy -Cherry 4oz* you can omit or change to any other alcohol
Butter 2lb
Egg Whites 16

  • Melt the butter and sugar together ensuring not to boil but dissolving the sugar crystals fully
  • Once hot pour over chopped chocolate and stir. Add Brandy
  • Add Egg whites once mixture is cooled
  • Place in a spring form pan (use plastic wrap to line pan as it may leak) and place in a water bath
  • Bake for 1hr at 350 degrees.

*Torte is finished when you see little movement in the centre of the torte. This Torte will shrink once cooled and the texture will be like fudge like. I personally make some ganache which is 3 parts chopped chocolate to one part warm cream(heat cream and pour onto chocolate stirring as little as possible to melt the chocolate). Pour the ganache over to decorate the torte and give it a clean finish!
 
I am so in on this one, Chef J (when it cools off a bit)!

I like the idea of the cherry brandy. I think Cointreau or Grand Marnier or similar would also be heavenly.
 
Brandy is nectar for the gawds CJ, and is why it is my elixir of choice. My fav has always been Cognac but I gormandize on Gingered Brandy(if not for Ness). Either would be my choice to souse :bunny: up that torte of yours.
