have you noticed how in baking, lemon seems to always go with vanilla ???

Well, vanilla goes with alot of different flavors, because it has a light, distinctive sweetness of it's own, and has more of a neutral, warmness in it's taste. It adds a little something to lemony, and other fruity desserts. :3

Adding something more strong like chocolate to lemon would probably be gross, because they're both potent in flavor by themselves. xP

I agree. I discovered vanilla significantly reduces the tartness of lemon flavored desserts. The very aspect of flavor you're looking for.
