I'm posting this in response to a member's search for an Oreo cookie cheesecake recipe. I've made this countless times and it always gets rave reviews. I will have to admit, though, I add more cookies in the batter than the recipe calls for. I've also substituted mini Oreos, which works out equally well. Enjoy!
1½ cups crushed Oreos
10 Oreos broken into quarters
32 oz. (four 8-oz pkgs.) cream cheese
1¼ cup granulated sugar
Dash salt
4 eggs
Cover the bottom of a 9-inch cheesecake pan with cookie crumbs. Soften cream cheese and beat slowly; add sugar and salt and beat well. Add eggs one by one. Stir in quartered Oreo cookies by hand and pour batter into pan.
Bake in a preheated 350º oven for about one hour or until a toothpick inserted in middle of cake has batter that sticks to it without running. Cool out of oven for 10 minutes while preparing topping.
TOPPING:
2 cups sour cream
¼ cup granulated sugar
1 teaspoon vanilla
Mix sour cream, sugar and vanilla well and pour onto cheesecake. Bake another 10 minutes. Let cake cool for 10 minutes and carefully run a spatula around edges of pan. Refrigerate and remove from pan after cake is thoroughly chilled.
