Pineapple Upsidedown Cupcakes?

I'm in the process of planning a baby shower, the theme will be Luau. A friend of mine owns her own cake company and will be making the cake for my shower (need ideas on that too...). I am going to be making the rest of the refresments. I would love to have cupcakes, for snacking before the cake (it will be a couples shower, the men folk will be having a cookout outside, and everyone will gather for dinner).

If anyone has any ideas on how to turn the cake into cupcakes it would be awesome! I'm trying to work out a way so they're all individual. I may even add a couple of twists to them.

I have a cupcake tin that has cups big enough to put one pineapple ring in each cup. It's the size of a 12 cup cupcake tin, but only has six cups. I got it at TJ Maxx. Or you could use chopped or chunk pineapple instead of sliced.

The one thing is you won't be able to use paper cups, but that should be okay. Just do exactly like you would for the big cake, but watch your times.
