What the heck is wrong with me?!?!
Why can I not for the life of me, no matter what kind of cake pan I use, bake a pineapple up-side down cake that doesn't stick and rip the yummy part off and glue itself to the pan???

When you cool it, before you turn it out, place the bottom part of the pan in hot water bath to loosen the sugars again. Or place on a very low flame/heat on stove to do the same, moving pan around to heat entire bottom surface.
I always used to have that problem, but did the above.

Good answer, quicksilver.
Another idea: when I've made them, I always pour (I think 1/2 stick or so of ) melted butter in the pan, wiped part of it up the side, then added brown sugar & mixed into the bottom. That's followed by chopped pecans and then the pineapples and cherries. (followed by the cake batter) With that much butter, you've got not only good cake topping, but a non-stick surface.

Jeez I must be lazy. I always make it in a cast iron skillet and cut and serve from there, LOL. So, never had to worry about flipping it over.
Sorry bout the birthday cake but its the thought that counts. And if he doesn't agree shove a hand full of cake at him!
