What to do with leftover dark chocolate/sour cream ganache?

Made cake today for MIL birthday but overestimated the amount of ganache I would need and have about half of it left (bear in mind this was the filling for a 6 layer sandwich cake so quite a lot).

Problem is the stuff gives me a migraine, neither of the kids will eat it and there is no way dh can eat all of it himself (he'll give it a good go mind you ;)). Also we don't eat cake at home as none of us are big fans except for dh who doesn't have a big appetite.

Is it possible to freeze it or how long will it keep in the fridge. Or any other ideas of what to do with it will be fab.

Make chocolate truffles! They're a little time-consuming, but very easy, and they can be stored in the refrigerator for several weeks or longer.

Another idea is to gently heat it over a double boiler as needed, and use it as a hot chocolate sauce over ice cream.

Or, just store the entire ganache in the refrigerator, and reheat when needed.
 
ooh truffles - I'd forgotten about them. Haven't made them in years.

That's fab thanks. I think I've got a few special occasions coming up in the next few weeks so they'll make nice little gifts.
