What would you frost/ice/glaze these Pumpkin Cupcakes with?
Our Friends of the Library puts a 'Dessert of the Month' up for auction every year and this is my month to make something. I'm too busy to bake my usual foofoo dessert, so I'm cheating with little spicy pumpkin cupcakes made from cake mix. I usually make them plain and call them muffins, but I'd like to dress them up a bit. Something caramel-ey? Chocolate? A liqueur or maybe rum? Thinking a glaze would travel and keep well.
I throw in a bit of extra spice and no one ever guesses it's a mix:
Mix a box of spice cake mix, a cup of pumpkin puree, 2 eggs and 2/3 c. water. Add a cup of mini chocolate chips. Bake in mini muffin pan: 350F for 12 min. or so.
