In the Baking Mood

I got in the baking mood today and had a little of each of these ingredients on hand. So what to do? My son had been asking me to make some 'healthy' cookies. (He's in the guard and a veteran ) So I decided to take a recipe for chewy oatmeal chocolate chips cookies and put a twist on it.

I made sure the butter, vanilla, sugar, honey and 1/2 cup of 'eggnog' were the consistency of marshmallow fluff. (Before adding the eggs).

I added 1/2 teaspoon each of nutmeg and cinnamon to the dry ingredients.

And then my 'trail mix' I kept equal to the amount that the recipe called for in oatmeal. So if the recipe calls for 2 cups oatmeal; mix the trail mix ingredients with oatmeal and use just 2 cups of the trail mixture in the batter. ( I had a little bit of pecans, dates, craisins, sunflower seeds and chocolate chips on hand for the 'trail mix')

The Chewy 'Oatmeal Trail' cookies turned out pretty good! My son said he liked them. And I guess that's what really matters!
