Mincemeat Rum & Brandy cookies

to begin, I am using Crosse & Blackwell Rum & Brandy Mincemeat filling/topping----it comes in a 29oz glass jar for $7.38 containing Pippin apples, spices,raisens,oranges & orange juice.................

1/2 cup all purpose flour
1/2 cup baking flour (personally I don't know what the difference is)
1/3 cup firmly packed brown sugar (I used the light---thats all I had)
1/8 + TEAspoon nutmeg
1/2 TEAspoon ++ cinnamon
1 egg
1/4 TEAspoon baking SODA
1/2 cup mincemeat
1/4 TEAspoon salt
1/2 cup ++ chopped pecans (don't chop too much & make them like dust)
1/3 cups REAL softened butter

prehead oven to 350F....I used 2 cookie pans w/parchment papers

large bowl, combine all the wet ingredients with a large serving spoon, then add dry........blend together....you won't need a mixer...............

I had to add a wee bit more flour......so it felt more like a cookie dough

drop by TEAspoons on cookie sheets.......

Bake 8-10minutes......I* would start watching the cooking thru the glass oven window at 7 minutes......who wants burned cookies

You have now the time to make the sauce....................

Confectioner's sugar
Orange juice
mis until smooth---glaze like

When cookies are done & still hot use a teaspoon and drizzles the sauce over the cookies............NOW sprinkle just plain confectioners sugar over this...............let cool.........and ask Hubby to wait (at least until they are cool enough to munch on)

I ended up with 31 incredible cookies........you can really taste all the fruits & spices
And so easy to do.............
