Oatmeal Chippers

OK, I usually use chocolate chips but I've used butterscotch and today used cinnamon chips and they were all wonderful!

1 cup margarine
2 cups brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1.2 tsp baking soda
2 cups oats
3/4 cup coconut
2 cups chips

Cream butter and sugar, add eggs, blend well, add vanilla and dry ingredients, blend well. Add oatmeal and coconut and chips, stir til fully incorporated. Drop by spoonfuls on greased sheet. Bake at 350 for 8-10 minutes. Makes ~ 5 dozen.

Have everything but cinnamon chips, so tomorrow we hit the store and get some...Thanks Alix..

They are excellent with any chips kadesma. Madeleine's favorite are 1/2 butterscotch 1/2 chocolate. Mine are pretty much anything chocolate! LOL!!!
