Oatmeal choc chip cookies

I'll be making these tomorrow, for the third time this month. :pig: They are just too good. I make them with quick cooking Irish oatmeal and I feel like that makes a big difference from quaker oats. I like how they are mostly oats and there is just enough flour to hold them together. They are chewy, good and very easy to make. You can add nuts too it you want, pecans or walnuts...

Oatmeal Chocolate Chip Cookies
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt (if using salted butter, omit salt)
3 cups quick-cooking oats
1 1/2 cups semisweet chocolate chips

Preheat oven to 325F. Cream butter, brown sugar and white sugar. Add vanilla and eggs one at a time until well incorporated. Mix in flour & baking soda. Stir in oatmeal and choc chips. Drop heaping teaspoon fulls on to a baking sheet and bake 12 minutes. Take them out when just slightly golden around the edge. They may look like they aren't done yet but if you bake them too long they will be crunchy, not chewy. Easy peasy.
