Preheat oven 350.

1/2 cup sugar
1/2 cup brown sugar (packed)
1/2 cup creamy PB
3/4 tsp baking soda
1/4 tsp baking powder
1 egg
1 1/4 cup AP flour
1 stick butter (softened)
or
1/2 stick butter + 1/4 cup shortening

(I use full stick butter, to me shortening is just like lard - dont prefer to use it.)

Mix together all ingrediants, take a small piece of dough from bowl, roll it into a little 1 inch ball in your hand, place 1-2 inches apart from other pb ball's, you place on ungreased cooking sheet. Put some granulated sugar on a napkin or bowl, take boddom of fork, place it into sugar, take fork, smash down top - to boddom, than side - to side, like a criss cross pattern (do this each time for each ball - including dipping back into sugar.)

Bake for 8 - 10 minutes. I found 8 was good, they do rise, so if they look small in the balls, even wen you smash, they get bigger.

Good luck

My mother loves to bake cookies, so I plan on printing this recipe out and see if she'll make some of these. Thanks.
