Saw these on the Peeps website, but I couldn't copy the photo, so use your imagination:
Lay one Peeps Marshmallow egg face down on a plate. Frost upside with frosting. Top with a nilla wafer. Take another Peeps egg and frost it's underside. Place on top of the nilla wafer, making an inside-out cookie.
Personally, after this were done, I'd dunk the whole thing in melted chocolate and let it cool.
