Thimble Cookies

1/2 cup butter
1/4 cup brown sugar
1 egg yolk
1 cup flour
lidful of vanilla

Cream together and roll into balls (1 inch). Dip into beaten egg white and roll each ball in coconut or crushed nuts. Bake at 300 for 5 minutes. Remove from oven and use a thimble to poke a hole in the center of each cookie. Place back into oven and bake for 15 minutes. Take out and fill the well in each cookie with a dab of jelly. (Grape is my favorite!)

We make these at Christmas and they are so festive looking. I have also heard these called Swedish Tea Rings.
