I'm getting ready for school to start for my grand kids. Decided on these as they keep well in an air tight tin.
Preheat oven to 350. Line baking sheet with parchment paper and grease it with about 1 tab. butter. In a bowl mix together 1-7/8 c. of chopped almonds and confectioners sugar 1 cup. In a large bowl beat 5 egg whites til stiff moist peaks form. Gently fold the 1/4 c. granulated sugar and the almond mixture into the egg whites. Drop the mixture by spoonfuls onto the prepared baking sheet space about 1 inch apart Bake til golden about 20 min.remove cookies from baking sheet and cool completely on a wire rack. Serve at room temp, if they last that long
