Caramel Problem...

The carmel came out wonderfully or so I thought ... I shaped it ,cut it, and wrapped it in wax paper wrappers and stored them in a cambro ... Two day's later I go to get one and the outside of the carmel is grainy and the middle is the buttery smooth goodness carmel should be ... What happened ?
