You are going to hate me for this. These are so addictive. So creamy in the middle. I like to use Peanut Butter & Milk Chocolate Chips also. If I don't have mint chips, I use chocolate chips and mint extract to taste. Peppermint extract is really good also. Make up your own combinations. Enjoy! Debbie

CHOCOLATE MINT CANDY

CENTERS

2/3 cup(s) SEMI SWEET CHOCOLATE CHIPS
4 cup(s) POWDERED SUGAR
1/2 cup(s) BUTTER; Softened.
1/4 cup(s) WHIPPING CREAM
1/2 teaspoon(s) VANILLA

COATING

2 cup(s) SWIRLED SEMI SWEET CHOCOLATE MINT CHIPS
2 1/2 tablespoon(s) SHORTENING

In a bowl melt chocolate chips in a microwave.
Beat butter, whipping cream and vanilla until fluffy.
Stir in 1 cup powdered sugar.
Stir in melted chocolate chips and the remaining powdered sugar.
Shape into 1" balls.
Chill balls if necessary, coat with chocolate coating.

Coating.
Combine Mint chips and shortening in a bowl and melt chips.
(You want chocolate to be thin so it is easier to coat candy) Lay balls on a fork and spoon chocolate over balls to coat; tap off excess chocolate and slide candy off with a toothpick onto wax paper.
Place in refrigerator to harden.
