Im not exactly sure im in the right area to be asking this, but I am new and think this is general enough.
I run a gourmet chocolate store and we have been having alot of problems with our white and dark chocolates. the white chocolate dries marbled and the dark chocolate is turning grey... does anyone have any thoughts about this? any help would be great. we keep having to throw away stuff. .THanks
