To make fondants heat sugar and water to soft ball stage
then pour it on a sheet of heat and non stick paper
use a wooden spoon and keep moving the solution when it starts to turn opaque use you hand and hold it massaging it like a dough then you get a successful fondant it will be white and you can coloring or candy flavouring in to it
TIP:the amount of sugar you cook is the amount of fondant you make
TIP:wet hands if the fondant gets to hard and use hands to massage it
Fondants are smooth candy dough that can be used to cover cakes or my style roll it into balls and refrigerate till hard
 
There are different fondant recipes, but for rolled fondant, like the kind that is used on cakes, it also requires corn syrup and/or solid shortening to keep it pliable. Other recipes require the use of confectioners sugar to achieve a silky texture. You have to keep in mind what your use for the fondant is, before you decide what recipe to use.
