I have been making hard candies for a while and have always dusted them with powdered sugar to keep them from sticking together after they come out of the mold. I am now experimenting with non-sugar coated ones and have run into a problem. No matter how light of a coating of cooking spray I use on the molds, the candies are coming out covered in oil.
My question is: Is there another I item I can use instead of the cooking spray? It there an easy way to get the oil off without having to wipe each individual candy down? Is the oil even necessary? I have been tempted to just pour the candy and see what happens but I did not want to take the chance of ruining the mold.
