Great candy from ol' days

This is the recipe a dear neighbor would make and share at Christmas time when I was a child. I have tried it 3x but no success. Do candy thermometers come w/ long stick? My candy therm. is too short for the big deep pot I have tried to make it in and my other heavy pots are too small and it boils over. Here is the recipe.
1 cake pan buttered and set aside
6 cups sugar
3 cups undiluted evaporated milk
2 cups light Karo syrup
1 tsp salt
Butter, size of walnut
2 tsp vanilla
3 cups nuts (halved brazil nuts is what she always used)
1st 3 ingredients bring to solid boil--234 degrees
add next 3 ingredients and beat 2 minutes. (she made this on her husbands day off to do this beating)
Add nuts and beat again. Press into cake pan 9x9? and cool 2 hrs.
