I made some peanut butter brittle that was supposed to be heated to 290 soft crack stage. However the sugar, water and corn syrup was only heated to about 250 hard ball stage. Is there any way to make the candy be a little bit harder?

If you've already mixed in the peanuts, I don't think there is anything you can do.

Not sure if you can return it to the heat and cook it to a higher temp. Someone who knows more than I will be along soon.
 
What I'm going to do is take half of it and see if I can reheat it to the right temperature and see if it works. I'll let you all know.
