I haven't made fudge for 30 years, but I used to be good at it. I got out my old recipe and made a batch last night and it was terrible. Very sugary and grainy. It's the kind that uses marshmallow creme, chocolate chips, butter, sugar and vanilla.

Help! Please!

Chocolate Cheese Fudge

1/2 pound Kraft Velveeta, sliced
2 sticks butter (1 cup)
1 teaspoon vanilla
1 cup chopped nuts
2 16 oz. boxes powdered sugar
1/2 cup cocoa powder

Spray a 9"square pan with cooking spray. In a saucepan over medium heat, melt butter and cheese together;stirring constantly until smooth. Remove from heat and stir in vanilla and nuts. Sift together sugar and cocoa in a large bowl. Pour cheese mixture into sugar mixture and stir until completely mixed; it will be very stiff. Press candy into prepared pan. Pat top of candy with a paper towel to remove any excess oil. Chill until firm.

For peanut butter fudge--add 1 cup peanut butter to the cheese mixture afterbutter and cheese have been melted together and omit the cocoa.
 
Here is the marshmallow fudge recipe I use. If you prefer the stovetop...you can do that instead.

MARSHMALLOW FUDGE

MELT 1 1/2 STICKS BUTTER IN MICROWAVE ON HIGH FOR 1 MINUTE.
ADD 3 CUPS SUGAR AND 2/3 CUP EVAPORATED MILK. STIR WELL.

MICROWAVE UNTIL BOILING (3-5 MINUTES ON HIGH) THEN STIR.

MICROWAVE AN ADDITIONAL 5 MINUTES OR TO 234'
REMOVE AND ADD:

1-12 OUNCE BAG CHOCOLATE CHIPS
1-7 OUNCE JAR MARSHMALLOW CREME
1 CUP NUTS IF WANTED
AND 1 TEASPOON VANILLA
