ISO help with sweetness of white chocolate
Since white chocolate is usually extra sweet I was wondering how I can tone down the sweetness without affecting the flavour. A friend sugested adding fresh lemon juice to the melted white chocolate but I'm afraid that might cause it to seize as well as give it a lemon taste. Any suggestions out there?

Lemongrass should infuse a lemon taste without the acid seizing the chocolate. A bit out there for some, but how about chilli?
