Help! My wife and I are getting to the age that we dont want the real rich and chocolatey fudge, but something a bit lighter. If you use 3 cups of semi-sweet choc chips in a 8" pan, it tastes way too chocolatey. It seems most of the recipes call for that type of fudge. I would like to find something that is a bit less rich, maybe for a 13 x 9 pan. We dont like peanut butter and prefer something simple, possibly microwaveable. Thanks for any replies. We are new here and it looks like there is a lot to utilize. :chef:

I am not sure if this is what you are looking for, but I love ganache. It is equal parts chocolate and heavy cream. Heat up the cream, just to a simmer, then pour over the chocolate. It is great to pour over cakes, or I even like to eat it when it hardens.

The great thing about it is you can flavor it in so many ways. Add some orange flavored liquer and orange zest. I mean there are so many great ways to make simple ganache a lot more.
