I tried several recipes for toffee and this was, by far, the best - this was my fourth attempt - in one day.
Chocolate Pecan Toffee
1 c sugar 1 c butter
¼ c water ½ t salt
1 t vanilla 6 oz semi sweet chips
¼ chopped pecans
In dutch oven combine sugar, butter, water and salt. Cook over medium heat stirring constantly (approximately 7 minutes) until mixture comes to a full boil. Boil, stirring often, until candy thermometer reaches 300 F, about 18-22 minutes (mine took longer)
Remove from heat and stir in vanilla. Spread on cookie sheet lined with waxed paper. Wait about 3 minutes and sprinkle on chocolate chips – spread with spatula and top with chopped pecans.
Cool completely and break into pieces.
