It's been pretty hot and humid. This is not a Ukrainian recipe, definitely not in a traditional way. But because my mother always served it in the hot summer month, it became a Ukrainian recipe de facto so to speak. Even when I was a kid she did not mind if I had a galls of this coffee.
Make coffee. We usually make a big pitcher of it. For the simplicity we use instant coffee, make as strong or as light as you like, sweet or unsweetened as you like. Put it in the refrigerator. Let it cool completely. Now put a scoop of Vanilla ice cream in a large cup, pure cold coffee over it. Drink it with a straw. Putting straw right into ice cream, so what you draw the coffee it comes thru the ice cream and becomes sweet. Of course you can use any flavor ice cream you like/prefer.
