Fresh vs Tinned Pears

When making a Pear Sorbet. Could you use tinned pears instead of fresh? As I'll need atleast 4lb of them. And that's for a serving for 6.

It will be paired with white chocolate & ginger cheesecake

Tinned pears should be fine but I would line a colander with a paper towel after draining them from the tin to mop up excess fluid. Can I come for tea please, your menu sounds like my idea of heaven?

I think any pears shall work, but I would use of the fresh pears.

If you must have to eat of the excess pears, fresh is best!

Remember, there are canned pears in syrup and others in natural juices alone.
