I love sugar apples...if its available I make this delicious sorbet





Sugar Apple Sorbet

Ingredients -
5 medium sugar apples, halved
2½ oz white sugar

Lime rind to garnish
Preparation:
Place the sugar in a pan with 1 and a half cups of water. Bring it to the boil, stirring to melt the sugar. Reduce the heat and simmer for 10 minutes until you have a thin syrup. Set aside to cool.
Scoop out the flesh from the sugar apples and press it through a sieve to remove any seeds.
Place the sugar syrup and sugar apple flesh in a food processor and blend until smooth. Pour this mixture into a freezer container and freeze for a couple of hours.
Remove from the freezer and mash with a fork.
Refreeze until firm.
Serve scoops of the sugar apple sorbet in small bowls, garnished with lime rind.
