Love the cardamom. When I last had this I had some chai tea served with it, went great.
Cardamom-Banana Ice Cream

1/2 cup palm sugar
6 green cardamom pods
1 cup milk
300ml cream (35-36% stuff)
3 egg yolks
4 ripe bananas, mashed
Combine the milk, cream and cardamom in a saucepan and bring to the boil. Turn off the heat and leave to infuse for 30 minutes.
Combine yolks and palm sugar in a bowl and mix well. Bring the milk mixture back to almost boiling, then temper the eggs with a small amount of the mixture, whisking constantly, then continue to add the rest of the milk mixture, whisking constantly. Return to the stove (in a bain marie preferably) and cook very slowly until mixture thickens and coats the back of a spoon.
Allow the mixture to cool down completely. Then combine with the mashed bananas. Proceed to freeze in an ice cream maker following instructions, or the manual way or freezing-stirring-freezing etc etc.
