Commercially made beef jerky. Please help.

Hello everyone.

My name is Alexander and I am writing from Minsk, Belarus.

I amabout to start making beef jerky commercially here but I only have recipes available from internet, for home made beef jerky. I wonder if there are any significant technological differences when you make it on a meat plant.

Also, I have another question. How do you make jerky with smoke taste without natural smoking?

Please help. Thanks!

beef jerkey

To get the smoky flavor just add a little bit of liquid smoke. I use this in my recipe and it makes a big difference.
