Commercially made beef jerky. Please help.
My name is Alexander and I am writing from Minsk, Belarus.
I amabout to start making beef jerky commercially here but I only have recipes available from internet, for home made beef jerky. I wonder if there are any significant technological differences when you make it on a meat plant.
Also, I have another question. How do you make jerky with smoke taste without natural smoking?
