Filet mignon

help need cooking tips on filet mignon... something basic... how long and whats the best cooking methond not including grilling.. time is limited have to work at 1pm..

I don't grill filet mignon, I pan roast it.

For a two inch thick filet. Preheat the oven to 350F Heat an oven-proof skillet over high heat and add a Tb of oil. Place the filet into the HOT pan and sear for 2-3 minutes. Turn over to the other side and sear again. Place the pan and filet into the oven for 8-10 minutes (rare to medium) remove to a plate, cover, and rest the meat for 5-10 minutes.
 
I do the same as Andy, and I add sauteed onions and worcheshire sauce, and have a side of roasted potatoes with the filets. Good luck.
 
I panfry too, while the meat rests make a simple pan sauce. Sliced mushrooms, chopped shallot, a dash of marsala, reduce till dry, 1/3-1/2c. heavy cream, correct seasonings with S+P, add in drippings from rested meat, serve sauce over (or under) the steaks.
