"Ham" Burgers

Ingredients:
1 1/2 lb ground beef
1/4 c. chopped onion
4 slices bacon, chopped into small pieces
1 thick (1/4") slice cooked deli ham, finely chopped
1/4 c. chopped medium cheddar cheese
1/4 c. chopped mushroom caps
cracked black pepper to taste
Salt to taste
1 egg
2 tsp. Sriracha chili sauce, or to taste

In a small skillet, over medium heat, cook bacon slices till done. Lay the
bacon onto paper towels Add onion to bacon fat and cook until onion is
softened. Remove onion and place in a small sieve. Allow excess grease to
drain from the onion.
When bacon is drained, chop the slices and combine with the onion.

In a large mixing bowl, combine the ground beef, egg, and chili sauce, salt
and pepper. Mix well. Add mushroom caps, cheese, and then bacon and onion
mixture. Mix together. When ingredients are well mixed, form into patties.
Cook patties on a hot grill to desired doneness.
Serve on lightly toasted hamburger buns slathered with Dijon Mayonnaise.

Dijon Mayonnaise

1/2 c. mayonnaise
1TBL Dijon mustard of good quality
1 tsp. Worcestershire sauce

Combine well and refrigerate, covered, until ready to use.
