ISO help cooking a prime rib
I have this boneless prim rib roast. How long does it take to cook it?
Let's say minutes per pound? It is an awesome piece of meat, from Urugway. Meat is very lean and will be very tender if cook proparly. Or what internal temps shuld I cook it to make it rear? Would 140-160 be ok?

Well, length of time has to do with oven temp and size of roast.
I haven't tried this technique, Charlie, but judging by his photos, I think I WILL! I take my beef out at 130 for rare. Lee Prime Rib or Standing Rib Roast - Recipe File - Cooking For Engineers |

For me, a good prime rib, or any other quality roast, requires a good thermometer. The electronic ones that read outside the oven are inexpensive and will prevent many kitchen mistakes. For my taste, 130 on the thermometer is about right. The meat will continue cooking for about 15 minutes or so out of the oven. I would forget minutes per pound, Likke Qsis says, ovens vary widely, even the location in the oven, cuts are configured differently, and cooking has too many variables. Also, the thermometer allows you to avoid opening the oven door, maintaining a more even temperature

Thank you, I'll try not to over cook it.

I like to cook my prime roast beef or any other meat in an Oven Bag.
Preheat oven to 325F. For every 2-3 lb it takes 3/4-1 1/4hr.
