I do have fennel seeds. I keep stock because I use it for a chicken diavlo that I make. I believe the original recipe is actually clams diavlo.

Today is the day I make the meatloaf. I'm actually serving it for supper.
I'll repost the recipe with changes later.
I might put the loaf together before hand and keep it refrigerated.

results of meatloaf

oh wow it's so good. This is the revised recipe.


2 Egg; beaten
almost 2 cups Dry bread crumbs.
3 sl bacon torn into pieces
1 sm Chopped onion
2.5-3 oz Cubed cheddar. I used Hoffmans
1/2 ts Seasoned salt
1/2 ts Pepper
1 lb ground beef
1 lb ground pork

Preheat oven to 350

Combine. Form into loaf. Brush a very small layer of bbq on top and
take 2 additional whole pieces of bacon and cut it into a few pieces for each slice. Put that on top. bake until no pink
remains. I cooked mine for an hour and a half.

My MIL made meatloaf many times when DH would visit over the years. She always put shredded carrots in there and you couldn't even see them, plus, always used Premium crackers ground up in hers too. Hum and hers was very good, okay, thinkin here
