Just FYI 1.5 pound beef sirloin is too small to boil

Just tried to boil 1,5 pound beef. Boiled up too fast. Was crazy chewy once it reached 145f. It's over for boil addicts such as myself.

Welcome to DC! Umm, why would you boil sirloin and take it to 145F? The only meat I simmer in water is flank steak for Ropa Vieja.

BOILING meat makes it tough …. It doesn't matter what the size of it is.

Next time braise it.
