Liver and onions was a once a week supper in our house.

Calves liver dredged in seasoned flour and fried in bacon grease.

Always served with strips of crisp bacon, fried onions, and mashed potatoes.

I also enjoy chicken livers in Spaghetti Alla Caruso.

Basically it is fried chicken livers in a rich tomato sauce.

The story is that Mama Leone made this at the request of the famous tenor Enrico Caruso.

They say he had to sing for his supper!
