Looking for Bacon Roast

I tried a bacon sirloin tip recipe last night and it was delicious! However, DH HATES mustard and this recipe called for coving the roast with dijon then thyme then bacon. I'd like to find a recipe that replaces the mustard or another recipe for bacon wrapped roast.

I would just eliminate the mustard and season with S&P and the thyme, then wrap with the bacon. There really is no sub that i can think of for the dijon mustard.

I would eliminate the thyme too unless you really like the combo. I would just salt, pepper, and wrap in bacon. I buy bacon wrapped filet mignon all the time and it doesn't need anything other than salt and pepper.

A very thin coat of (Yellow) mustard is often used to coat meats prior to applying a rub for BBQing --- You cannot taste the mustard in the finished product in the least...I would proceed with the recipe as written...Or maybe splash with some dry white wine..then the thyme...then wrap in bacon...etc.,

There is only one Quality worse than Hardness of Heart, and that is Softness of Head.
