MEATLOAF

1 pound Ground beef
1/2 cup evaporated milk
1/3 cup uncooked rolled oats
1/4 cup chopped onion ( I use a whole onion)
1 teaspoon salt
1/8 teaspoon pepper

Sauce:
1 can tomato sauce
3 TBSP brown sugar
1 TBSP vinegar (I use white)
1 teaspoon Worchestershire sauce
1/2 teaspoon Chili powder ( I use more, I love chili flavor)
1/2 teaspoon salt

Mix and cook the sauce ingredients for 5 minutes. Stir half
the mixture into your meat mixture. Stir well. Put in a loaf pan.
Pour the remaining sauce over the top. Bake at 350 degrees
for 50 minutes to 1 hour.

I think the sauce is the key to this recipe. It is SO GOOD!
Sometimes I double the sauce, as we eat it all. I sometimes
mix a stack or 1/2 stack of crushed crackers in the recipe
as well to "stretch" it, and it is very good. Makes wonderful
cold meatloaf sandwiches
 
oooooh, GrannyG - that sounds hearty and delicious, and kitchenelf took the words right from me- there is nothing better than a meatloaf sandwich!

I make the meat loaf the night before and then pop in the oven when I get home from work. The other one I freeze for next week:

2 onions, chopped or grated
2 pounds ground beef
1/2 cup seasoned bread crumbs
1 large egg (or 2 small eggs)
2 tablespoons brown sugar
1 tablespoon dry mustard
2/3 cup BBQ sauce
1/2 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 350 F; grease two loafpans and set aside.

Combine all ingredients in a large mixing bowl and mix well. Put into two greased loaf pans and bake for 30 minutes or until well done. Drain grease and serve. Slices well when cold for sandwiches. We don't have meat loaf too often at our house. It is not DH favorite meal.

Thanks for your recipe. I am always looking for a meat loaf recipe using 1 pound of ground beef. There is just the two of us and it is plenty with just enough left over for a couple of sandwiches the next day.:)

Well GrannyG, looks like a winner to me:ROFLMAO: and the ingredients, are on hand pretty much always.......

the other day i made Paula deen Bacon Cheesburger meatloaf. it was a big hit in the family. and it made great meatloaf sandwiches the next day. The thing i did different is i added a little brown suger to the topping sauce and i omitted the fried onions bits here is the link to it.

I just saw Paula make that meatloaf today, and I printed it out. It looked good except for the addition of brown sugar to the ketchup and mustard topping (she said she wanted it to taste BBQ-y, and I sure do not).

I read the reviews of the recipe and most people raved about it. Some said they reduced the amount of bacon (I would) and some said they added onions (I would, and I'd add garlic, too).

Did the meatloaf taste like a cheeseburger to you? That's what I'm going for!
