Mexican Mix-up


(serve with a spicy salsa and sour cream for those who really like that taste!)


1 1/2 pounds lean ground beef
1 cup chopped onion (1 medium)
1/2 cup chopped green pepper ( 1/2 medium)
1 large clove garlic, minced
1 tablespoon chili powder (or to taste)
1 (15-ounce) can tomato sauce
1 (16-ounce) can corn, drained
2 cups cooked elbow macaroni (about 6 ounces before cooking)
Salt and pepper to taste
3 to 4 cups tortilla chips
1/2 cup shredded sharp cheddar cheese

Preheat oven to 350 degrees. In a large skillet over medium heat, brown beef. Add onion, green pepper, garlic and chili powder. Cook, stirring occasionally, until vegetables are tender. Drain off fat and add tomato sauce, corn and macaroni; season with salt and pepper. Cook until warmed through, stirring occasionally, about 10 minutes. Pour into greased 2-quart baking dish. Top with chips and cheese. Bake until cheese melts, about 15 minutes. Serve with sour cream and extra salsa....
