Beef & Avocado Salsa Soft Tacos
1 Minced Large Red Onion
1 TBS Chilli Powder
1 Cup Diced Tomato
1/8 Cup Tomato Sauce
1 Small Seeded Jalapeno Pepper
1 Diced Avocado
20 OZ Flank Steak Crosscut into 4 pcs
1 tsp Chipolte Chilli Powder
1/2 Cup diced Tomatilla
1/2 Cup Minced Fresh Cilantro
2 TBS Lime Juice
Salt & Pepper to taste
In a slow cooker put 3/4 of the onion in with the Beef, Chilli powders, and salt & pepper to taste and Cook for 8 hours covered. In the last 25 minutes, toss together the remaining ingredients with a little more salt and pepper. Shred the beef with a fork and stir into the sauce in the slow cooker. Put the beef into small tortillas and top with the salsa, serve with sour cream and re fried beans on the side.
