Need good easy recipe, need to work in the garden tonight
and I would like to just put all in the crock pot and play in the dirt.
 
I do not use a recipe I just make it but this is the general idea. I make mine on top the stove or in the oven. Brown the meat (chuck, 7 bone, round, etc.) add chopped/sliced onions, garlic and cook slowly for an hour or two. Add green peppers, tomatoes, beef bullion and water if needed. The onion, tomato and meat will give off enough liquid you do not need to add more. Salt if needed. Cook another hour or two. Oven temp 300* and barely simmer on top of stove. If using the crock pot, I would still brown the meat and add all the veggies to cook on low for 6 to 8 hrs. I do like lots of onions in it.
 
This is how I make swiss steak in the crock:

take round steak and dredge in flour. Cook in a little oil for 2-3 minutes per side. In a crockpot, throw in some cut up carrots, an onion, garlic, a chopped green pepper (if I have one on hand) the cooked meat, a large can of stewed tomatoes and a bay leaf. Cook on low for 8 hours.

I serve it with mashed potatoes. Sometimes I add in a little corn starch at the end to thicken it up.
