Yes. However, if you can use ground chuck it would be better. With ordinary Ground beef (hamburger) you may have to use more than the 2 lbs. called for in the recipe, because a lot more fat will be cooked out leaving less meat. You will probably need to cook 2-3/4 pounds of ground beef to equal the same amound of boneless chuck roast, but only 2-1/4 pounds of ground chuck.
 
You can really use any cut of beef, but as Selkie pointed out because the meat had been ground you will lose more weight because of the fat loss.

Go with the chuck roast!!! Its so good shredded!!

Using ground chuck or beef has one big drawback. When you cook it long term it has a tendency to break down and get powdery.
