marmalady brings up a very good point about the type of pan you are using. If it is not a heavy pan then that could greatly increase your chances of burning the meat.

The skillet with the ridges in it is a steak skillet and is very good to use to cook steak on .....Just make sure you teart the pan before cooking on it or your meat will stick to the ridges
I own 3 of these pans and they are great just like a BBQ
