Stuffed Beef steak

My Mother's Recipe:

2 lbs. round steak, tenderized 1/4 cup thinly sliced onions
1/4 c. wine vinegar carrots as needed
1 clove garlic, sliced 1/4 cup chopped parsley
1/4 tsp. thyme
1/4 tsp. pepper 1/4 cup water
1 tsp. salt 2 tbsp. flour
1 c. soft bread crumbs
2 tbsp. shortening
2 cups fresh spinach
1 can condensed beef broth

Place meat on large pan. Mix the first five ingredients and pour over the meat. Arrange a layer of spinach, carrots, and bread crumbs and onion and sprinkle with parsley. Roll up and tie securely with toothpicks. Place in shallow baking dish, pour on broth. Bake 2-21/2 hrs. @ 350 til tender
