TNT Boerewors alla Snip (Farmers sausage)

My Boerewors recipe specially for Taxlady!

3kg (6.6lbs) ground beef
500gr (1.1 lbs) lamb fat ground or finely chopped
5 tsps of coriander seeds (roughly ground)
5 tsps of sea salt
1 tsp of black pepper
5 tsps of ground allspice
half a tsp of ground cloves
half a tsp of ground nutmeg
half a cup of good vinegar ( I use brown grape vinegar )

Natural casing for stuffing ( I use lamb intestines ) about 7m will do.

Mix all the dry ingredients well. Mix meat, fat and vinegar, add dry spices and blend well. Stuff sausage casings to form long sausages.
BBQ or grill to your liking and serve.

This recipe works well with ground lamb and also ground venison.

Leftover mix can also be used to make meatballs.

hmmm, lamb fat might be hard to come by where I live. Shoot.
I'll have to come up with something and see if I can get the neighbor to run some through his setup when he's making sausage out of venison this year.

You can use bacon fat, works well too :)
