I found this recipe for grilled porterhouse steaks with just three ingredients (steak, mixed whole peppercorns, & coarse salt). I'd like to try it, but all I have is T-Bone steaks (four that total about 3 pounds). How should I change the recipe for the type & amount of steak I have? Also, if I use a broiler pan, about how long do you think the steaks will take to cook? Thanks.

Welcome to the site!

Personally I would not change anything. It should work just fine the way it is, but with the steaks you already have. As for how long under the broiler, I would go by temp, not time. It all depends on how you like them cooked, how thick they are, how close to the broiler, etc. Use a thermometer and you can't go wrong. Just remember to let the steaks rest for a few minutes after cooking before you cut into them.

You might try a sauce with them, but T-bones and porterhouses both have such great flavor, I'd go w/something simple, like a mushroom or onion pan sauce.
