Breaded Pork Loin Cutlets

I am still having a hard time grasping the idea that allowing breaded anything to sit would not get soggy. Meat does weep.



Think of the breading as a wick (Capillary action) that pulls the moisture to the surface where it can be cooked off. If the moisture is on the meat under the coating when it steams it will push that coating off.
