I really need to start writing replies and threads on the word processor and cut/pasting into a post.
Bucky, have you thought about:
1) Browning said chops and deglazing the skillet with a wee little bit of wine and/or stock, then pouring the liquid into the crockpot.
2) Saute the onions and apples quickly in a hot skillet a few minutes before serving, and deglazing that pan with some applejack, or a mix of brandy and apple juice?
Something I've been doing for years, whenever I'm sauteing, is to deglaze with either stock, liquor, or fruit juice, depending on what's in the pan. I abhor adding water to pan except for making stock and pasta.
