Homemade Carnitas Tacos by James, on Flickr

First melted 2 pounds of Lard
Added 5 pounds of Boston Butt cut into 2 inch cubes.
Made a bundle of 1 medium onion, 1 bunch of thyme and a few bay leaves. Added this to the pot.
1/2 litter of made in Mexico Coca Cola (real sugar)
Added 1 and 1/2 Tablespoons of Sea Salt
Enough water to cover.

Bring everything up to a slow boil. Need to slowly cook off the water to make the meat tender.
When the water is almost gone and the meat starts to fry take out the bundle with the onion.
When the meat has a nice THIN crust remove the meat and place it on a rack to cool.

I would have loved to used that. I had to use the hydrogenated stuff. This after running all over town looking for any lard. Its getting very hard to find. If I had planned ahead I should have bought some from the real butcher but he is 45 minutes away.

Lard is congealed pork fat, yes?
